It fermented mostly in stainless steel, with part in 500-litre barrels, with indigenous yeasts, and spent nine months on lees.\u003c\/p\u003e\n\u003cp\u003eIt's clean, young and serious. It has 12.5% alcohol, a pH of 3.35 and 6.73 grams of acidity, and is fresh, balanced and pure.
