Description
Château Ausone, named in honour of the Roman poet Ausonius, is a small, legendary Saint-Émilion estate run by the Vauthier family. Its south-east-facing limestone terraces yield Cabernet Franc and Merlot wines of great rarity, and tiny production makes Ausone one of the most exclusive reds in Bordeaux. It was rated 95 from Robert Parker.
In the glass it shows a deep colour and a nose of ripe black fruit, cedar, tobacco and graphite, with fine spice that gains complexity with air. The palate is structured and elegant, with firm yet polished tannins, fresh acidity and a long, persistent finish.
Decant one to two hours ahead and serve at 16–18 °C with roast kid, lamb chops, dry-aged beef or hard cheeses. It is a wine built for the long haul that rewards patient cellaring.
