Wine profile
Body
This wine: 4 out of 5 — closer to «full».
How heavy and full the wine feels in your mouth — from light like skimmed milk to rich like cream. It comes mainly from alcohol, extract and, in sweet wines, sugar.
Wine profile

This wine: 2 out of 5 — closer to «silky».
Tannins come from grape skins, seeds and oak. You feel them as a pleasant drying grip on gums and tongue — from silky and velvety to firm and chewy.
Wine profile

This wine: 3 out of 5 — right in the middle.
The freshness that makes your mouth water, like a squeeze of lemon. It gives a wine tension, length and ageing potential, and makes it great with food.
Wine profile
Alcohol
This wine: 5 out of 5 — closer to «high» (20% vol.).

Description
TASTE HISTORY WITH THE OLDEST PORT WINE HOUSE
Every wine tells a story. Kopke's Colheitas, however, tell a unique one. Tasting a wine is tasting history and, in the case of this 1975 Colheita, it means remembering a landmark event such as the founding of Microsoft by Bill Gates and Paul Allen on 4 April 1975.
WINEMAKING
Hand-harvested at optimal ripeness. The grapes are destemmed, crushed and made into wine through careful maceration to extract colour, tannins and aromas, intensified by frequent pumping over during fermentation. This takes place in vats (lagares) at controlled temperature (28–30°C) until the desired sweetness (baumé) is reached. Grape spirit is then added to create the final fortified wine. A high-quality wine from a single harvest. Colheita ages in oak casks for varying periods, but never less than 7 years. It's then bottled and released according to market demand.
TASTING NOTES
An appealing amber colour. A rich, perfumed nose with predominant dried-fruit aromas elegantly wrapped in spicy notes. Smooth and silky on the palate, with remarkable structure and body. A delicate wine defined by an elegance that lasts into a persistent finish.
RECOMMENDATIONS
Served cool, it shows all its finesse and sophistication, especially with desserts based on caramel, nuts and spices, such as caramel fondant with apple and ginger jelly, tarte tatin, crème brûlée, and medium-intensity cheeses. Serve at 12–14°C.
