Description

San Román Malvasia 2021 is a Spanish white of very limited production (just 3,950 bottles), made by the prestigious Bodegas San Román (of the renowned García family) in the D.O. Toro.

This wine stands out for breaking with tradition in a region historically dominated by powerful reds, offering a white with a fresh, complex and mineral profile.

The 2021 Malvasía white comes from a year of mild temperatures and persistent rain, conditions that produced a fresh, aromatic wine with moderate alcohol of 12.5% and a pH of 3.3, showing its freshness.

It's made from 60-year-old vines in Los Almendros (paraje El Monte). Fermentation took place in new and used 500-litre oak barrels, where the wine stayed for 10 months.

The nose is clean and young, quite fruit-driven, but also showing complexity and depth, with well-integrated oak. It's not an explosive wine; rather it's discreet and restrained, serious and harmonious. On the palate it has a smooth texture, finishing tasty with a pleasant, almost salty sensation.

3,950 bottles were produced. The wine was bottled in July 2022.

San Román is the Toro project of the García family, owners of Mauro. The family has 130 hectares of vines in San Román de Hornija, Pedrosa del Rey, Villaester and Morales de Toro. The vineyards are certified organic and, since 2016, have been farmed biodynamically.

The estate's average annual production is about 300,000 bottles.
