A full-bodied, austere red, with grilled herbs, cumin spices, and crushed stones over fresh black cherries and blue fruits. I love the firmness here, with fine, powdery tannins that gently envelop the palate before a medium-long, appealing finish. It offers good clarity and purity on the palate, despite its closed structure. Drink now or cellar.
Sardón is a red wine from VT Castilla-León produced by the Quinta Sardonia winery. This wine is predominantly Tempranillo (96%), with small amounts of Garnacha, Cabernet Sauvignon, and Malbec added.
Coming from vineyards mainly around 35 years old - although some vines are even centuries old - the grapes used in Sardón grow in limestone, sand and clay soils.
Vinification of harvested bunches begins with a short maceration phase, carried out at controlled temperatures. This process aims to achieve minimal extraction of the grapes, conveying the fruity and aromatic character of the berries.
Sardón ages for twelve months: the first six in second-use French oak barrels and the last six in stainless steel and cement tanks.
