This 100% organic Chardonnay Blanc de Blancs is a true expression of refinement and character. It has a bright and elegant light yellow color. Its mousse is abundant, giving it a creamy and sophisticated texture.
On the nose, it reveals a captivating scent of puff pastry and toasted bread, complemented by notes of baked pear and caramelized apple.
On the palate, it is extremely clean and refreshing, with an impeccable balance between freshness and sweetness. The residual sugar is well-balanced, providing harmony and elegance. The finish is medium and persistent, bringing fruity 'nuances' of apple and a subtle minerality.
Versatile and gastronomic, this Champagne is a secret asset for both sophisticated dishes and robust desserts.
Pascal Doquet, a winegrower since 1982, created his own label in 2004, years after taking over his family’s vineyards. His 8.7-hectare estate in the Côte des Blancs and Coteaux Vitryats, including vineyards in Vertus and Le Mesnil-sur-Oger that are over 40 years old on average, has been organically farmed since 2006 and certified organic since 2010. Pascal avoids plowing, and mechanical maintenance is only carried out on the soil surface, promoting soil life throughout the year, with various plants seeding themselves naturally. Fermented with native yeasts and vinified with low levels of sulphites, his wines are matured for six months on the lees in enamelled steel tanks and old oak barrels. The range, dominated by blanc de blancs and highlighting different terroirs, offers expressive wines with immediate charm.
