A complex blend of the finest rum aged for 12 long years, with a nose full of personality, showing fruitcake, rum ice cream, chocolate, dried ginger, cinnamon and clove. It develops into baked bananas with toffee notes alongside vanilla oak and deep notes of orange peel. The palate recalls chocolate sauce and sweet toffee, with the tropical fruit flavours from the nose. Chocolate flakes sprinkled over melting vanilla ice cream. What's the right way to drink and judge a rum?
First look at the colour, then the aroma and then the flavour. We want a golden, translucent spirit, and we can see it best by swirling the glass a little, but not vigorously as with wine. Bring the glass up to your nose, but don't breathe in deeply, as we want to pick out the aromas. The last step is tasting. First take a small sip so the palate gets used to the flavour, and there we detect basic sensations such as sweet, salty and bitter. On the second sip, leave it in the mouth for a while. That's where you'll discover new flavours and aromas.
