The austere nose shows notes of citrus aromas and dry straw. Mineral and very elegant, it offers an enormous complexity of aromas, being elegant and complex, and concentrated with a firm acidity and firm finish.

Produced with white grapes from the same old vineyard as Procura Red, Procura White is a wine they have been producing since 2013. Susana Esteban wanted a white that would age for a long time in the bottle and thought this could be done with this vineyard. Procura White 2021 has a fragrant nose of flowers, wild herbs and spices – it smells like a vineyard, she told me – I visited in winter. It was fermented in stainless steel and aged in used Burgundy barrels, the same nine barrels, year after year. It has an elegant profile, but with concentration and power, good maturation, 13.2% alcohol and a very low pH (3.2), denoting freshness. It is balanced, with power and elegance. Bottling always takes place before the next harvest, so that they can reuse the barrels.
