Boekenhoutskloof’s Porcupine Ridge Chardonnay comes from the Western Cape region. The wine’s name is inspired by the porcupine, one of the winery’s most distinctive inhabitants and a symbol of efforts to conserve local biodiversity.
The grapes are harvested at different levels of ripeness to balance freshness, fruitiness and structure. Fermentation takes place cold in stainless steel tanks with selected yeasts, followed by a three-month maturation in used French oak barrels.
It has a straw-yellow color. The aroma of this Chardonnay is intense and vibrant, with a profusion of notes of lemon, lime, grapefruit, cream and pineapple. On the palate, it is balanced, fresh, with citrus touches and a pleasant spicy nuance. The finish is long and persistent, with notes of green apple and verbena.
This Chardonnay pairs perfectly with vegetable tempura, appetizers and flans.
