Description
Pascal Doquet's "Horizon" Brut Champagne is made exclusively from 100% Chardonnay grown in the Côte des Blancs, the area best suited to white grapes. It is a Blanc de Blancs with a fresh, refined profile. It is released after a minimum of 36 months on the lees, which gives the Chardonnay precious evolved notes that enrich its characteristic floral and fruity bouquet.
Appearance: In the glass it shows a bright straw-yellow hue with a fine, persistent bead that highlights its elegance and liveliness.
Nose: Intense and complex, with an expressive floral bouquet and notes of ripe yellow fruit, vibrant citrus and an intriguing iodine touch reflecting the terroir's characteristic minerality.
Palate: Taut and vibrant, with sharp, perfectly balanced acidity. The fruit flavours intertwine with nuances of brioche and nuts from the long contact with the lees. The finish is long, marked by captivating freshness and lingering sophistication.
Food pairing: Ideal with oysters, fresh seafood, goat's cheese and delicate fish dishes.
Conclusion: Pascal Doquet Brut Blanc de Blancs "Horizon" is a refined Champagne with great personality, masterfully reflecting the terroir of the Côte des Blancs. Its balance of freshness, structure and complexity makes it an excellent choice both for celebrations and for sophisticated dining.
Pascal Doquet, a grower since 1982, created his own label in 2004, years after taking over his family's vineyards. His 8.7 hectares in the Côte des Blancs and Coteaux Vitryats, including vines in Vertus and Le Mesnil-sur-Oger averaging over 40 years old, have been farmed organically since 2006 and certified since 2010. Pascal avoids ploughing; mechanical work is done only on the soil surface, encouraging soil life all year round, with many plants seeding themselves naturally. Fermented with native yeasts and made with low sulphites, his wines age for six months on the lees in enamelled steel tanks and old oak barrels. The range, dominated by blanc de blancs and highlighting different terroirs, offers expressive wines with immediate charm.
