It is worth mentioning that it is the first winery to receive the Huella de Carbono, an ecological award that guarantees ecological and sustainable practices that do not harm the environment. Tomás Postigo 5º Año vines are planted mainly in calcareous, loamy and sandy soils with rocks and rocks, at an altitude of 750 to 1,000 meters above sea level. The harvest is carried out at the ideal ripening point in small 10 kg boxes and taken directly to the winery. At the winery, the grapes pass over the manual selection table and alcoholic fermentation takes place with native yeasts. Tomás Postigo 5º Año ages for 12 months in French oak barrels. 30 different wines are made, some of which undergo malolactic fermentation in barrels. It is then refined in the bottle for 40 years.
