• Ex-bourbon: American oak that first aged bourbon (US law requires new casks for bourbon, so many are available second-hand); they tend to give vanilla, coconut and caramel.
A finish is a final period of maturation in a second cask.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

Description
Redbreast Lustau Edition was born from the partnership between Irish Distillers and the Lustau bodega in Jerez de la Frontera. The Midleton single pot still whiskey first matures in bourbon and sherry casks, then spends a year in Spanish oak oloroso butts seasoned at the bodega itself. It was the first Redbreast with a finish.
Matured in bourbon casks and oloroso sherry casks and bottled at 46%, it shows red berries, dried fig, walnuts and cinnamon on the nose. The palate is rich and dense, with raisins, toffee, ginger and dark chocolate. The finish is long, with walnuts, spice and red berries.
A generous, enveloping after-dinner whisky. Serve it neat in a nosing glass and add a drop of water to open the aromas. It pairs with dark chocolate, nuts, fruit cake and aged cheeses.
