Origin and Production: Champagne Pascal Doquet Extra Brut Blanc de Blancs Grand Cru "Diapason" comes from selected plots of Chardonnay grown in the renowned Grand Cru commune of Mesnil-sur-Oger, located in the prestigious Côte des Blancs region. Fermentation takes place exclusively with indigenous yeasts, and the final blend is the result of the combination of two distinct vintages: 69% from the 2011 harvest and 31% from the 2010 harvest. This process gives the champagne a unique and sophisticated identity.

Tasting Notes:

Visual: It has a bright straw-yellow hue, accompanied by an extremely fine and persistent perlage, highlighting its superior quality.

Aroma: The bouquet is intense and refined, with notes of yellow berry fruits, nuances of dried fruits and elegant toasted touches, which enrich the aromatic complexity.

Palate: On the palate, it is fresh, mineral and crystalline. The excellent structure is harmoniously balanced with the vibrant acidity, providing a persistent and sophisticated finish, marked by delicate floral notes.

Pairing: Pascal Doquet’s Grand Cru Diapason is an ideal accompaniment to fish and seafood dishes. Its complexity and freshness make it perfect for pairing with Catalan lobster, enhancing the flavors of the dish. It also stands out as an excellent aperitif champagne, providing a memorable sensory experience.

Conclusion: A champagne with a strong personality, which masterfully reflects the terroir of Mesnil-sur-Oger. Elegance, freshness and minerality make Pascal Doquet Extra Brut Blanc de Blancs Grand Cru "Diapason" a sublime choice for lovers of great sparkling wines.
