Billecart Salmon
Mareuil-sur-Aÿ, Champagne, France · since 1818
Billecart-Salmon was born in 1818 from the marriage of Nicolas François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, with Elisabeth's brother Louis Salmon making the wines. Family-run for seven generations, it pioneered long, low-temperature fermentations in 1958, created the Cuvée Nicolas François in 1964 and made its very pale Brut Rosé the house's flagship.

Description
Cuvée Louis Salmon is the vintage Blanc de Blancs of Mareuil-sur-Aÿ house Billecart-Salmon, named after one of its founders. It is a single-vintage 100% Chardonnay Champagne made only in quality years.
It shows a fine mousse and aromas of lemon, green apple, white flowers and a touch of brioche, with marked chalky minerality. The palate is taut, precise and persistent.
Perfect as an aperitif or with oysters, sushi and grilled fish. Serve at 9–11 °C.
