Description
R.D. stands for "Recemment Dégorgé": Bollinger R.D. 2008 spends many years on its lees and is disgorged only shortly before leaving the Aÿ house. The blend is 71% Pinot Noir and 29% Chardonnay from 18 crus, fully barrel-fermented.
The result is a deep Extra Brut with brioche, nuts, candied citrus and spice, carried by the bright acidity of the 2008 vintage.
Pair with truffled poultry, veal, fine fish or aged cheeses. Serve at 10–12 °C.
