Le Cotet Blanc de Blancs Extra Brut is an organic champagne developed by the Jacques Lassaigne estate with the Chardonnay grape variety in the Champagne AOP designation.
This natural champagne vinified by Emmanuel Lassaigne comes from a small vineyard in Montgueux, planted on a limestone hill. No pesticides, fertilizers or synthetics are used. Yield is limited to 60 hl/ha and harvesting is manual.
During harvest, the grapes are gently transported to the cellar where they are pressed and the must obtained is fermented in a stainless steel tank. The second fermentation takes place in the bottle, stored for 24 months.
Mineral notes, very crunchy, with a lemon finish. A wonderful companion to oysters, clams and other shellfish.
