It is a very fine and well-rounded white. The nose presents a very aromatic profile, with white fruits, anise, menthol, brioche and sweet spices. In the mouth it is lively, sweet and fresh, with fruits (white peach). Great aging potential. .

If there is one thing that stands out about Jean-Paul Droin Chablis 1er Cru Montée de Tonnerre, it is its mineral notes. The character of this white wine, made in the AOC Chablis Premier Cru, comes directly from its Kimmeridgian soil. This land, which was submerged by the waters of the Tethys Sea (an ocean from the Mesozoic era) during the Jurassic period, is composed of clayey and stony limestone, with remains of fossil oysters.

Here, at the Montée de Tonnerre vineyard in the Chablis Valley in Burgundy (northeastern France), Jean-Paul Droin oversees the Chardonnay grapes used in the production of his wines. In total, there are almost two hectares, facing west, where vines grow with an average age of 50 years, cultivated using completely sustainable methods.

To produce Jean-Paul Droin Chablis 1er Cru Montée de Tonnerre, the grapes are placed in a press where they are crushed. The resulting must undergoes cold decantation for 12 to 24 hours. This pre-fermentation process is very important, as the cold helps to decant the vegetal residues and substances that add herbaceous notes to the wine. After this, part of the Jean-Paul Droin Chablis 1er Cru Montée de Tonnerre ferments in stainless steel tanks and the rest in barrels. Finally, a malolactic fermentation and the blend, aged for 8 to 10 months, complete the process, and the Jean-Paul Droin Chablis 1er Cru Montée de Tonnerre is bottled.
