Every wine tells a story. In the case of Colheita Kopke, that story is unique. Savor
a wine is to savor history and in the case of this Colheita it is to remember remarkable events
such as UNICEF's award of the Nobel Peace Prize for its contribution to the "promotion of fraternity among nations."
WINEMAKING AND AGING
Hand-harvested at their optimum ripeness, the grapes are destemmed, crushed, and vinified using a process based on careful maceration, extracting color, tannins, and aromas from the skins, complemented by constant pumping over during fermentation. Fermentation takes place in wine presses at a controlled temperature between 28-30°C (82-86°F) until the desired Baumé level is reached. At this stage, grape brandy (benefit) is added, creating a fortified wine. This high-quality wine comes from a single harvest. It ages in wood for varying periods, never less than 7 years, and is then bottled according to market demand.
TASTING NOTES
Vivid amber color. A powerful aroma with notes of dried and liqueur fruits. Wonderful balance, good structure, and smoothness. The freshness seduces and envelops the senses. An elegant and endless finish.
RECOMMENDATIONS
Slightly chilled, it expresses all its finesse and sophistication when paired with desserts based on caramel, dried fruits, and spices, such as caramel fondant with apple and ginger jelly, tarte tatin, crème brûlée, and medium-hard cheeses. Serve between 12 and 14°C.
