Pittacum Aurea is a red wine made by Bodegas Pittacum in the Bierzo DO.
This is a single-varietal Mencía wine, produced with grapes from a single estate, Finca Areixola. A vineyard over 100 years old, it only allows manual intervention. It has never been compacted or pressed with heavy machinery.
The harvest is carried out entirely manually, and the grapes are transported to the winery in small 12 kg boxes, ensuring that there are no unwanted breaks before they reach the winery.
The grapes pass through a sorting table where each bunch is selected. Once selected, the bunches are crushed without destemming.
Fermentation takes place in stainless steel tanks for 15 days at a temperature of 28ºC, with bazuqueios and light pumping over.
After fermentation, it macerates for another 20 days before transfer and remains for another two weeks in the tank before being transferred to new French oak barrels, where it will mature for 14 months without any transfer.
It is then bottled and rests in the bottle for another two years before being sold.
