White Search 2021

Luis Gutiérrez: Produced with white grapes from the same old vineyard as Procura Tinto, Procura White is a wine they have been producing since 2013. Susana Esteban wanted a white that would age for a long time in the bottle and thought it could be made with this vineyard. Procura White 2021 has a perfumed nose of flowers, wild herbs and spices – it smells like vineyards, she told me – I visited in winter. It fermented in stainless steel and aged in used Burgundy barrels, the same nine barrels, year after year. It has an elegant profile, but with concentration and power, good maturation, 13.2% alcohol and very low pH (3.2), denoting freshness. It is balanced, with power and elegance. Bottling always takes place before the next harvest, so that the barrels can be reused.
