Mariano García de Bodegas Mauro started the Maurodos project in 1995 in the Denomination of Origin Toro, in the municipalities of Pedrosa del Rey, Villaester and San Román de Hornija. It is an initiative in which most of the work is done with the Tinta de Toro grape variety, but it also uses other varieties such as Garnacha or Malvasía.
San Román Malvasía is born in vineyards over 60 years old planted in sandy soils and located 700 meters above sea level. These are strains that, despite not being officially certified, are grown organically and ecologically without the use of herbicides or pesticides.
Once in the cellar, San Román Malvasía undergoes selection and stemming. It is then macerated with skins for 12 hours and, after decanting, it is transferred to 500 liter barrels for fermentation. Finally, it is left to age for 10 months with periodic movement of the lees.
San Román Malvasía is the first white wine made by this winery in Toro with old vines from Castile Malvasía or as it is also called Doña Blanca. A round, enveloping and fragrant wine.
