The cask the spirit matured in gives colour, aroma and texture. Many houses use casks that previously held another drink:
• Ex-bourbon: American oak that first aged bourbon (US law requires new casks for bourbon, so many are available second-hand); they tend to give vanilla, coconut and caramel.
• Port: Port casks tend to add red fruit and sweet notes.
A finish is a final period of maturation in a second cask.

A 700 ml bottle gives about 17 measures of 4 cl. Once opened, store it upright, tightly closed and away from light and heat: spirits keep well for months but slowly lose aroma once the bottle is half empty.

Description
The Lochranza distillery on the Isle of Arran opened in 1995 and has become one of the most respected names of Scotland’s new generation. Arran Port Cask Finish spends its final years in port casks, which give it a rosy colour and red fruit. It is bottled at 50%, non-chill filtered and with natural colour.
Matured in bourbon casks and port casks and bottled at 50%, it shows red berries, dark chocolate, orange and vanilla on the nose. The palate is creamy, with cherry, plum, cocoa and cinnamon. The finish is long, with red berries, dark chocolate and spice.
A generous, enveloping after-dinner whisky. Serve it neat in a nosing glass and add a drop of water to open the aromas. It pairs with dark chocolate, nuts, fruit cake and aged cheeses.
